Hearty Finnish Cabbage Soup Recipe

Ingredients:

  • 1 medium cabbage
  • 3 carrots
  • 5 potatoes
  • 1 onion
  • 2 liters of water
  • 4 beef bouillon cubes
  • 10 allspice berries
  • Marjoram to taste
  • 1-3 tablespoons of syrup
  • 500 grams of ground lamb, pork, or beef

Instructions:

  1. Prepare the Vegetables:
    • Shred the cabbage and slice the onion thinly.
    • Peel and dice the potatoes and carrots into cubes.
  2. Cooking the Base:
    • Place the cabbage and carrots in a large pot.
    • Add 2 liters of water to the pot.
    • Bring to a boil and then add the bouillon cubes, allspice berries, marjoram, and syrup to taste.
    • Let it simmer on low heat.
  3. Preparing the Meat:
    • In a frying pan, sauté the onion until golden.
    • Add the ground meat and brown it.
    • Transfer the cooked meat and onions to the pot with the cabbage and carrots.
  4. Simmering the Soup:
    • Allow the soup to cook slowly on low heat for several hours. The longer it simmers, the better the flavors will meld together.
    • About 30 minutes before serving, add the diced potatoes and let them cook until tender.

  • This soup is best served the next day, as the flavors continue to develop. It is perfect for making a large batch, so you have plenty of leftovers to enjoy.
